  • 1 cup sour cream
  • 2 tablespoons unsalted butter
  • Freshly cracked black pepper (to taste)
  • Chopped fresh parsley (for garnish, optional)

Instructions

  1. Begin by bringing 6 cups of water to a vigorous boil in a large saucepan.
  2. Once boiling, stir in 1 teaspoon of salt to enhance the flavor.
  3. Gradually add the cornmeal to the boiling water while whisking continuously to ensure a smooth mixture without lumps.
  4. Lower the heat to a gentle simmer and let the polenta cook for approximately 20-25 minutes, stirring often until it thickens and starts to separate from the pot’s edges.
  5. After the polenta reaches the desired consistency, incorporate the butter and mix until it melts completely into the warm polenta.
  6. Allow the mixture to rest off the heat for a few minutes to achieve a firmer texture.
  7. To serve, spoon the creamy polenta onto plates, generously sprinkle with crumbled feta cheese, and add a dollop of sour cream on top.
  8. Finish with a sprinkle of freshly cracked black pepper and, if you like, a touch of chopped parsley for a fresh garnish.
