Instructions
- Begin by bringing 6 cups of water to a vigorous boil in a large saucepan.
- Once boiling, stir in 1 teaspoon of salt to enhance the flavor.
- Gradually add the cornmeal to the boiling water while whisking continuously to ensure a smooth mixture without lumps.
- Lower the heat to a gentle simmer and let the polenta cook for approximately 20-25 minutes, stirring often until it thickens and starts to separate from the pot’s edges.
- After the polenta reaches the desired consistency, incorporate the butter and mix until it melts completely into the warm polenta.
- Allow the mixture to rest off the heat for a few minutes to achieve a firmer texture.
- To serve, spoon the creamy polenta onto plates, generously sprinkle with crumbled feta cheese, and add a dollop of sour cream on top.
- Finish with a sprinkle of freshly cracked black pepper and, if you like, a touch of chopped parsley for a fresh garnish.
