Description
A delicious and easy recipe for Rocky Road Ice Cream Bars, perfect for a sweet treat!
Ingredients
Scale
- 2 cups chocolate ice cream, softened
- 1 cup mini marshmallows
- 1 cup chopped walnuts or pecans
- 1 cup chocolate chips
- 1/4 cup hot fudge sauce
- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup powdered sugar
Instructions
- In a medium bowl, combine the graham cracker crumbs, melted butter, and powdered sugar. Mix until well combined. Press this mixture evenly into the bottom of a 9×9-inch baking dish to form the crust. Place in the freezer for 10 minutes to set.
- In a large bowl, mix the softened chocolate ice cream with the mini marshmallows and chopped nuts until evenly distributed.
- Remove the crust from the freezer and spread the ice cream mixture over the crust, smoothing it out with a spatula.
- Drizzle the hot fudge sauce over the top of the ice cream layer. Use a knife or spatula to gently swirl the fudge into the ice cream for a marbled effect.
- Sprinkle the chocolate chips evenly over the top. Cover the baking dish with plastic wrap and freeze for at least 4 hours, or until firm.
- Once set, remove from the freezer and let sit at room temperature for about 5 minutes before cutting into bars.
- Serve immediately and enjoy!
Notes
- For a lighter version, use low-fat ice cream and reduce the amount of chocolate chips.
- You can also substitute the nuts with your favorite candy pieces for a fun twist.
