- 2 medium turnips, peeled and diced (about 2 cups)
- 4 slices of bacon, chopped
- 1 medium onion, diced
- 1 red bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 large eggs (optional, for serving)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the diced turnips, chopped bacon, onion, and red bell pepper.
- Drizzle the olive oil over the mixture and sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss everything together until well coated.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the turnips are tender and the bacon is crispy.
- If using eggs, cook them to your liking in a skillet while the hash is roasting.
- Serve the roasted turnip and bacon hash hot, topped with a fried or poached egg if desired, and garnish with fresh parsley.
Notes
- For a spicier kick, add a pinch of cayenne pepper or some diced jalapeños to the hash before roasting.
- Substitute the bacon with turkey bacon or a plant-based alternative for a lighter version.
