Ingredients

  • 1 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 68 tablespoons ice water
  • 1 pound ripe tomatoes, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. While the dough chills, place the sliced tomatoes in a bowl. Drizzle with olive oil and balsamic vinegar, then sprinkle with oregano, basil, garlic powder, salt, and pepper. Toss to coat and set aside.
  4. On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
  5. Sprinkle the shredded mozzarella cheese in the center of the dough, leaving a 2-inch border. Arrange the seasoned tomato slices over the cheese.
  6. Fold the edges of the dough over the tomatoes, pleating as necessary to create a rustic edge. Brush the exposed dough with the beaten egg.
  7. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the tomatoes are tender.
  8. Allow the galette to cool for 5-10 minutes before slicing and serving.
