- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 6–8 tablespoons ice water
- 1 pound ripe tomatoes, sliced
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- While the dough chills, place the sliced tomatoes in a bowl. Drizzle with olive oil and balsamic vinegar, then sprinkle with oregano, basil, garlic powder, salt, and pepper. Toss to coat and set aside.
- On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.
- Sprinkle the shredded mozzarella cheese in the center of the dough, leaving a 2-inch border. Arrange the seasoned tomato slices over the cheese.
- Fold the edges of the dough over the tomatoes, pleating as necessary to create a rustic edge. Brush the exposed dough with the beaten egg.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the tomatoes are tender.
- Allow the galette to cool for 5-10 minutes before slicing and serving.

- For added flavor, mix in fresh herbs like basil or thyme with the cheese before adding the tomatoes.
- Substitute the mozzarella with goat cheese or feta for a tangy twist.
