Description

A delicious and healthy Roasted Tomato & Basil Chickpea Tart that combines the flavors of roasted tomatoes, fresh basil, and creamy ricotta cheese.


Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 pre-made pie crust (9-inch)
  • 1 cup fresh basil leaves, chopped
  • 1 cup ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the cherry tomatoes, olive oil, oregano, garlic powder, salt, and pepper. Toss until the tomatoes are well coated. Spread the mixture on a baking sheet and roast for 15-20 minutes, until the tomatoes are soft and slightly caramelized.
  3. While the tomatoes are roasting, in another bowl, mash the chickpeas with a fork until slightly chunky.
  4. Add the chopped basil, ricotta cheese, egg, Parmesan cheese, and red pepper flakes (if using) to the mashed chickpeas. Mix until well combined.
  5. Remove the roasted tomatoes from the oven and let them cool slightly. Fold the tomatoes into the chickpea mixture.
  6. Pour the chickpea and tomato mixture into the pre-made pie crust, spreading it evenly.
  7. Bake the tart in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is set.
  8. Allow the tart to cool for 10 minutes before slicing and serving.

Notes

  • For a gluten-free option, use a gluten-free pie crust or make a crust using almond flour.
  • Add some sautéed spinach or kale to the chickpea mixture for extra nutrients and flavor.
