Description
A delicious and healthy Roasted Tomato & Basil Chickpea Tart that combines the flavors of roasted tomatoes, fresh basil, and creamy ricotta cheese.

- 1 cup canned chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 pre-made pie crust (9-inch)
- 1 cup fresh basil leaves, chopped
- 1 cup ricotta cheese
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the cherry tomatoes, olive oil, oregano, garlic powder, salt, and pepper. Toss until the tomatoes are well coated. Spread the mixture on a baking sheet and roast for 15-20 minutes, until the tomatoes are soft and slightly caramelized.
- While the tomatoes are roasting, in another bowl, mash the chickpeas with a fork until slightly chunky.
- Add the chopped basil, ricotta cheese, egg, Parmesan cheese, and red pepper flakes (if using) to the mashed chickpeas. Mix until well combined.
- Remove the roasted tomatoes from the oven and let them cool slightly. Fold the tomatoes into the chickpea mixture.
- Pour the chickpea and tomato mixture into the pre-made pie crust, spreading it evenly.
- Bake the tart in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is set.
- Allow the tart to cool for 10 minutes before slicing and serving.
Notes
- For a gluten-free option, use a gluten-free pie crust or make a crust using almond flour.
- Add some sautéed spinach or kale to the chickpea mixture for extra nutrients and flavor.
