  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 4 ounces goat cheese, crumbled
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Begin by boiling a pot of salted water and cook the penne pasta according to the package instructions until it reaches an al dente texture. Drain and set aside.
  2. In a large skillet, pour in the olive oil and warm it over medium heat. Add the chopped onion and sauté for about 5 minutes, stirring occasionally, until it becomes translucent and tender.
  3. Introduce the minced garlic to the skillet and sauté for an additional minute, allowing the aroma to fill the kitchen.
  4. Next, incorporate the chopped roasted red peppers, vegetable broth, dried basil, and oregano into the skillet. Season with salt and pepper, then bring the mixture to a gentle simmer. Let it cook for around 5 minutes to meld the flavors.
  5. For a silky sauce, blend the mixture using an immersion blender until smooth. If you don’t have one, carefully transfer the mixture to a standard blender, blend until creamy, and return it to the skillet.
  6. Toss the drained penne into the sauce, ensuring each piece is well-coated.
  7. Take the skillet off the heat and fold in the crumbled goat cheese, stirring until it melts and creates a creamy texture.
  8. Serve the dish hot, garnished with fresh basil leaves if you wish.
