- 4 ounces goat cheese, crumbled

Instructions
- Begin by boiling a pot of salted water and cook the penne pasta according to the package instructions until it reaches an al dente texture. Drain and set aside.
- In a large skillet, pour in the olive oil and warm it over medium heat. Add the chopped onion and sauté for about 5 minutes, stirring occasionally, until it becomes translucent and tender.
- Introduce the minced garlic to the skillet and sauté for an additional minute, allowing the aroma to fill the kitchen.
- Next, incorporate the chopped roasted red peppers, vegetable broth, dried basil, and oregano into the skillet. Season with salt and pepper, then bring the mixture to a gentle simmer. Let it cook for around 5 minutes to meld the flavors.
- For a silky sauce, blend the mixture using an immersion blender until smooth. If you don’t have one, carefully transfer the mixture to a standard blender, blend until creamy, and return it to the skillet.
- Toss the drained penne into the sauce, ensuring each piece is well-coated.
- Take the skillet off the heat and fold in the crumbled goat cheese, stirring until it melts and creates a creamy texture.
- Serve the dish hot, garnished with fresh basil leaves if you wish.
