Description
A delicious recipe for Roasted Kelewele, spiced plantains that are crispy on the outside and soft on the inside.

- 3 ripe plantains
- 1/4 cup vegetable oil
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon garlic powder
- 1 tablespoon fresh lime juice
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel the plantains and cut them into 1-inch cubes or diagonal slices.
- In a large bowl, combine the vegetable oil, salt, ground ginger, cayenne pepper, paprika, ground cinnamon, garlic powder, and lime juice. Mix well.
- Add the plantain pieces to the bowl and toss until they are evenly coated with the spice mixture.
- Spread the coated plantains in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy on the edges.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a sweeter version, add 1 tablespoon of honey or maple syrup to the spice mixture before coating the plantains.
- To make it spicier, increase the cayenne pepper to 1 1/2 teaspoons or add a pinch of crushed red pepper flakes.
