Description

A delicious recipe for Roasted Kelewele, spiced plantains that are crispy on the outside and soft on the inside.


Ingredients

  • 3 ripe plantains
  • 1/4 cup vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh lime juice

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the plantains and cut them into 1-inch cubes or diagonal slices.
  3. In a large bowl, combine the vegetable oil, salt, ground ginger, cayenne pepper, paprika, ground cinnamon, garlic powder, and lime juice. Mix well.
  4. Add the plantain pieces to the bowl and toss until they are evenly coated with the spice mixture.
  5. Spread the coated plantains in a single layer on the prepared baking sheet.
  6. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy on the edges.
  7. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For a sweeter version, add 1 tablespoon of honey or maple syrup to the spice mixture before coating the plantains.
  • To make it spicier, increase the cayenne pepper to 1 1/2 teaspoons or add a pinch of crushed red pepper flakes.
