- 2 cups seedless grapes (red or green)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 8 ounces feta cheese, crumbled
- 1 large baguette, sliced
- 1 tablespoon honey (optional)
- Fresh rosemary sprigs for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss the grapes with olive oil, sea salt, black pepper, and chopped rosemary until evenly coated.
- Spread the grapes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until the grapes are soft and slightly caramelized.
- While the grapes are roasting, toast the baguette slices on a separate baking sheet in the oven for about 5-7 minutes, or until golden brown.
- Once the grapes are done, remove them from the oven and let them cool slightly.
- On a serving platter, arrange the toasted baguette slices. Top each slice with crumbled feta cheese and a spoonful of roasted grapes.
- Drizzle honey over the top if desired, and garnish with fresh rosemary sprigs.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the grape mixture before roasting.
- You can substitute the feta cheese with goat cheese for a different flavor profile.
