A delicious flatbread topped with roasted fennel, ripe pear, and creamy ricotta, perfect for a unique appetizer or main dish.

- 2 medium fennel bulbs, trimmed and sliced thin
- 1 large ripe pear, cored and sliced thin
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1 cup ricotta cheese
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 4 flatbreads or naan
- 1 cup shredded mozzarella cheese
- Fresh arugula for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the sliced fennel, olive oil, salt, pepper, thyme, and garlic powder. Toss until the fennel is well coated.
- Spread the fennel mixture on the prepared baking sheet in a single layer. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
- While the fennel is roasting, in a small bowl, mix the ricotta cheese, honey, and lemon juice until smooth. Set aside.
- Once the fennel is done, remove it from the oven and let it cool slightly.
- Increase the oven temperature to 425°F (220°C). Place the flatbreads on a baking sheet.
- Spread a generous layer of the ricotta mixture over each flatbread. Top with the roasted fennel, sliced pear, and shredded mozzarella cheese.
- Bake the flatbreads in the oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a couple of minutes. Garnish with fresh arugula if desired before slicing and serving.
Notes
- For added flavor, sprinkle some crushed red pepper flakes on top before baking for a spicy kick.
- Substitute the pear with sliced apples or figs for a different sweet twist.
