Roasted Fennel & Pear Flatbread: A Must-Try Delight!

Description

A delicious flatbread topped with roasted fennel, ripe pear, and creamy ricotta, perfect for a unique appetizer or main dish.


Ingredients

  • 2 medium fennel bulbs, trimmed and sliced thin
  • 1 large ripe pear, cored and sliced thin
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1 cup ricotta cheese
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 4 flatbreads or naan
  • 1 cup shredded mozzarella cheese
  • Fresh arugula for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the sliced fennel, olive oil, salt, pepper, thyme, and garlic powder. Toss until the fennel is well coated.
  3. Spread the fennel mixture on the prepared baking sheet in a single layer. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
  4. While the fennel is roasting, in a small bowl, mix the ricotta cheese, honey, and lemon juice until smooth. Set aside.
  5. Once the fennel is done, remove it from the oven and let it cool slightly.
  6. Increase the oven temperature to 425°F (220°C). Place the flatbreads on a baking sheet.
  7. Spread a generous layer of the ricotta mixture over each flatbread. Top with the roasted fennel, sliced pear, and shredded mozzarella cheese.
  8. Bake the flatbreads in the oven for 10-12 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a couple of minutes. Garnish with fresh arugula if desired before slicing and serving.

Notes

  • For added flavor, sprinkle some crushed red pepper flakes on top before baking for a spicy kick.
  • Substitute the pear with sliced apples or figs for a different sweet twist.
