A delightful roasted cod dish served with asparagus and a zesty citrus sauce.

- 4 (6-ounce) cod fillets
- 1 pound fresh asparagus, trimmed
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 orange, zested and juiced
- 1 lemon, zested and juiced
- 1 tablespoon honey
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, toss the asparagus with 1 tablespoon of olive oil, salt, pepper, and garlic powder. Spread the asparagus evenly on one side of the prepared baking sheet.
- In the same bowl, drizzle the cod fillets with the remaining tablespoon of olive oil, then season with salt, pepper, and paprika. Place the cod fillets on the other side of the baking sheet.
- Roast in the preheated oven for 12-15 minutes, or until the cod flakes easily with a fork and the asparagus is tender.
- While the fish and asparagus are roasting, prepare the citrus sauce by whisking together the orange zest, orange juice, lemon zest, lemon juice, and honey in a small bowl until well combined.
- Once the cod and asparagus are done, remove them from the oven and drizzle the citrus sauce over the cod. Garnish with chopped parsley before serving.
Notes
- For extra flavor, consider adding a pinch of red pepper flakes to the citrus sauce for a spicy kick.
- You can substitute the cod with salmon or tilapia for a different taste.
