Ingredients

- 2 cups cherry tomatoes
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- 2 cloves garlic, minced
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Spread the cherry tomatoes on a baking sheet and drizzle with olive oil.
- Roast the tomatoes in the oven for about 20 minutes, or until they are blistered and soft.
- Remove the tomatoes from the oven and let them cool slightly.
- In a mixing bowl, combine the roasted tomatoes, red onion, cilantro, jalapeño, garlic, and lime juice.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate for later use.
Notes
- For a spicier salsa, leave some seeds in the jalapeño.
- This salsa pairs well with grilled meats and fish.
- Can be stored in the refrigerator for up to 3 days.
