Ingredients

  • 2 cups cherry tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread the cherry tomatoes on a baking sheet and drizzle with olive oil.
  3. Roast the tomatoes in the oven for about 20 minutes, or until they are blistered and soft.
  4. Remove the tomatoes from the oven and let them cool slightly.
  5. In a mixing bowl, combine the roasted tomatoes, red onion, cilantro, jalapeño, garlic, and lime juice.
  6. Season with salt and pepper to taste.
  7. Serve immediately or refrigerate for later use.
