Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup pitted Medjool dates
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat your oven to 425°F.
  2. Remove the leaves from the cauliflower and slice it into 1-inch thick steaks.
  3. Place the cauliflower steaks on a baking sheet lined with parchment paper.
  4. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper.
  5. Roast in the preheated oven for 25-30 minutes, flipping halfway through.
  6. While the cauliflower is roasting, prepare the date purée by combining pitted dates and water in a small saucepan.
  7. Bring to a simmer over medium heat, stirring occasionally until the dates are soft, about 5-7 minutes.
  8. Remove from heat and add lemon juice and cinnamon, then blend until smooth.
  9. Once the cauliflower steaks are done, let them cool for a few minutes and serve topped with date purée.
