Ingredients

  • 2 pounds carrots, peeled and chopped into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon lemon juice
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F. On a baking sheet, toss the chopped carrots with olive oil, salt, and black pepper. Spread them out in a single layer and roast for 25-30 minutes, or until tender and slightly caramelized.
  2. In a large pot over medium heat, add a splash of olive oil and sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and grated ginger, and cook for an additional 2 minutes until fragrant.
  3. Add the roasted carrots to the pot along with the vegetable broth. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a blender.
  5. Stir in the coconut milk and lemon juice, and heat through. Adjust seasoning with additional salt and pepper if needed.
  6. Serve hot, garnished with fresh cilantro.

  • For a spicier kick, add a pinch of red pepper flakes or a diced jalapeño when sautéing the onion.
  • Substitute the coconut milk with heavy cream for a richer flavor, or use almond milk for a lighter option.
