- 2 pounds carrots, peeled and chopped into 1-inch pieces
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tablespoon lemon juice
- Fresh cilantro, for garnish
Instructions
- Preheat the oven to 400°F. On a baking sheet, toss the chopped carrots with olive oil, salt, and black pepper. Spread them out in a single layer and roast for 25-30 minutes, or until tender and slightly caramelized.
- In a large pot over medium heat, add a splash of olive oil and sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and grated ginger, and cook for an additional 2 minutes until fragrant.
- Add the roasted carrots to the pot along with the vegetable broth. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a blender.
- Stir in the coconut milk and lemon juice, and heat through. Adjust seasoning with additional salt and pepper if needed.
- Serve hot, garnished with fresh cilantro.
Notes
- For a spicier kick, add a pinch of red pepper flakes or a diced jalapeño when sautéing the onion.
- Substitute the coconut milk with heavy cream for a richer flavor, or use almond milk for a lighter option.
