A delicious recipe for roasted artichokes served with a zesty lemon aioli.


Ingredients

  • 2 large artichokes
  • 1 lemon, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon water

Instructions

  1. Preheat the oven to 425°F.
  2. Trim the artichokes by cutting off the top inch and removing the tough outer leaves. Cut the stems to about 1 inch in length. Rub the cut edges with half of the lemon to prevent browning.
  3. Place the artichokes in a pot of boiling salted water for 5 minutes. Remove and let drain upside down.
  4. Drizzle the artichokes with olive oil and season with salt and pepper. Place them cut side down on a baking sheet.
  5. Roast in the preheated oven for 30-35 minutes, or until the leaves are tender and can be easily pulled off.
  6. While the artichokes are roasting, prepare the lemon aioli. In a bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, and water. Mix until smooth and well combined.
  7. Once the artichokes are done, serve them warm with the lemon aioli on the side for dipping.

Notes

  • For a smoky flavor, add a pinch of smoked paprika to the aioli.
  • Try substituting Greek yogurt for half of the mayonnaise for a lighter version.
