Description
A delicious recipe for roasted artichokes served with a zesty lemon aioli.
Ingredients

- 2 large artichokes
- 1 lemon, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon water
Instructions
- Preheat the oven to 425°F.
- Trim the artichokes by cutting off the top inch and removing the tough outer leaves. Cut the stems to about 1 inch in length. Rub the cut edges with half of the lemon to prevent browning.
- Place the artichokes in a pot of boiling salted water for 5 minutes. Remove and let drain upside down.
- Drizzle the artichokes with olive oil and season with salt and pepper. Place them cut side down on a baking sheet.
- Roast in the preheated oven for 30-35 minutes, or until the leaves are tender and can be easily pulled off.
- While the artichokes are roasting, prepare the lemon aioli. In a bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, and water. Mix until smooth and well combined.
- Once the artichokes are done, serve them warm with the lemon aioli on the side for dipping.
Notes
- For a smoky flavor, add a pinch of smoked paprika to the aioli.
- Try substituting Greek yogurt for half of the mayonnaise for a lighter version.
