Ingredients

  • 8 ounces shrimp, peeled and deveined
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1/4 cup chopped green onions
  • 1/4 cup water chestnuts, finely chopped
  • 8 rice paper wrappers
  • Cooking oil for frying

Instructions

  1. In a mixing bowl, combine the shrimp, cornstarch, soy sauce, sesame oil, garlic, ginger, green onions, and water chestnuts. Mix well until the shrimp is evenly coated.
  2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable. Remove and place it on a clean surface.
  3. Place about 1 tablespoon of the shrimp mixture in the center of the rice paper wrapper. Fold the sides over the filling, then roll it up tightly from the bottom to the top, sealing the edges.
  4. Repeat the process with the remaining wrappers and filling.
  5. Heat a skillet over medium heat and add enough cooking oil to cover the bottom. Once hot, add the dumplings in batches, being careful not to overcrowd the pan.
  6. Fry the dumplings for about 3-4 minutes on each side or until they are golden brown and crispy. Remove and drain on paper towels.
  7. Serve hot with soy sauce or your favorite dipping sauce.

Notes

  • For a vegetarian option, substitute the shrimp with finely chopped mushrooms and tofu.
  • Add a splash of lime juice to the filling for a zesty flavor boost.
