- 1 cup chia seeds
- 4 cups coconut milk (either canned or from a carton)
- 1/2 cup honey or maple syrup
- 1/4 cup freshly squeezed lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened shredded coconut
- 1/4 teaspoon salt
Instructions
- Pour the coconut milk into a spacious bowl.
- Add the chia seeds, honey or maple syrup, lime juice, lime zest, vanilla extract, and salt.
- Stir the mixture vigorously until everything is well incorporated and the chia seeds are evenly dispersed.
- Allow the mixture to rest for about 10 minutes, then stir again to ensure there are no clumps.
- Prepare an 8×8-inch baking dish by lining it with parchment paper.
- Pour the chia mixture into the lined dish and smooth it out with a spatula.
- Top the mixture with the shredded coconut, spreading it evenly.
- Cover the dish with plastic wrap and refrigerate for a minimum of 4 hours, or overnight, until it solidifies.
- Once set, lift the block out using the parchment paper and cut into bars.
- Serve chilled and enjoy the refreshing flavors!
Notes
- For a vegan option, use maple syrup instead of honey.
