  • 1/2 cup unsweetened shredded coconut
  • 1/4 teaspoon salt

Instructions

  1. Pour the coconut milk into a spacious bowl.
  2. Add the chia seeds, honey or maple syrup, lime juice, lime zest, vanilla extract, and salt.
  3. Stir the mixture vigorously until everything is well incorporated and the chia seeds are evenly dispersed.
  4. Allow the mixture to rest for about 10 minutes, then stir again to ensure there are no clumps.
  5. Prepare an 8×8-inch baking dish by lining it with parchment paper.
  6. Pour the chia mixture into the lined dish and smooth it out with a spatula.
  7. Top the mixture with the shredded coconut, spreading it evenly.
  8. Cover the dish with plastic wrap and refrigerate for a minimum of 4 hours, or overnight, until it solidifies.
  9. Once set, lift the block out using the parchment paper and cut into bars.
