Description
A delicious and visually stunning Red Velvet Strawberry Cheesecake that combines the rich flavors of red velvet cake with creamy cheesecake and fresh strawberries.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 1/2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 large eggs
- 1 tablespoon cocoa powder
- 1 cup fresh strawberries, chopped
- 1/4 cup strawberry jam
- 1 tablespoon lemon juice
- Red food coloring (optional, for color enhancement)
Instructions
- Preheat the oven to 325°F and grease a 9-inch springform pan.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and press into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and mix until fully incorporated.
- Add the vanilla extract, sour cream, and eggs, mixing well after each addition.
- Sift in the cocoa powder and mix until just combined. If desired, add a few drops of red food coloring.
- Gently fold in the chopped strawberries.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.
- Before serving, mix the strawberry jam and lemon juice in a small bowl and spread it over the top of the cheesecake. Garnish with additional fresh strawberries if desired.
Notes
- For a lighter version, substitute low-fat cream cheese and sour cream.
- For a chocolate twist, add mini chocolate chips to the batter before baking.
