Description

A delicious and visually stunning Red Velvet Strawberry Cheesecake that combines the rich flavors of red velvet cake with creamy cheesecake and fresh strawberries.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 1/2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 large eggs
  • 1 tablespoon cocoa powder
  • 1 cup fresh strawberries, chopped
  • 1/4 cup strawberry jam
  • 1 tablespoon lemon juice
  • Red food coloring (optional, for color enhancement)

Instructions

  1. Preheat the oven to 325°F and grease a 9-inch springform pan.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and press into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and mix until fully incorporated.
  4. Add the vanilla extract, sour cream, and eggs, mixing well after each addition.
  5. Sift in the cocoa powder and mix until just combined. If desired, add a few drops of red food coloring.
  6. Gently fold in the chopped strawberries.
  7. Pour the cheesecake batter over the crust in the springform pan.
  8. Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly.
  9. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  10. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.
  11. Before serving, mix the strawberry jam and lemon juice in a small bowl and spread it over the top of the cheesecake. Garnish with additional fresh strawberries if desired.

Notes

  • For a lighter version, substitute low-fat cream cheese and sour cream.
  • For a chocolate twist, add mini chocolate chips to the batter before baking.
