- 2 cups red velvet cake mix
- 1/2 cup vegetable oil
- 1 cup water
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup cream cheese frosting (store-bought or homemade)
- 8 ounces white chocolate, chopped
- 1 tablespoon vegetable oil (for melting chocolate)
- Sprinkles (optional, for decoration)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large mixing bowl, combine the red velvet cake mix, vegetable oil, water, eggs, and vanilla extract. Mix until smooth and well combined.
- Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
- Once cooled, crumble the cake into a large bowl. Add the cream cheese frosting and mix until fully combined and the mixture holds together.
- Using your hands, roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Freeze the cake balls for about 30 minutes to help them firm up.
- While the cake balls are chilling, melt the white chocolate and vegetable oil in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Dip each chilled cake ball into the melted white chocolate, allowing any excess to drip off. Place them back on the parchment-lined baking sheet.
- If desired, sprinkle with sprinkles before the chocolate sets. Allow the chocolate to harden at room temperature or refrigerate for quicker setting.

- For a fun twist, try using different flavored cake mixes, such as chocolate or lemon, and matching frosting.
