Ingredients

  • 1 teaspoon sea salt
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup finely sliced scallions
  • 1/4 cup chopped fresh parsley (optional)
  • 2 tablespoons coconut oil (for frying)

Instructions

  1. Soak the rinsed red lentils in water for about 30 minutes to soften them.
  2. Drain the lentils and transfer them to a blender. Add fresh water and blend until smooth.
  3. In a mixing bowl, combine the blended lentil mixture with sea salt, ground coriander, turmeric, black pepper, scallions, and parsley (if desired). Allow the batter to rest for 20 minutes.
  4. Heat a non-stick frying pan over medium heat and melt 1 tablespoon of coconut oil.
  5. Ladle approximately 1/4 cup of the lentil batter into the pan, swirling it to create a thin layer. Cook for 3-4 minutes until the edges lift and the surface is dotted with bubbles.
  6. Carefully flip the crepe and cook for an additional 2-3 minutes until golden.
  7. Repeat with the remaining batter, adding more coconut oil as necessary.
  8. Serve warm with your favorite toppings such as yogurt, fresh herbs, or salsa.
