Description
A delightful duo of red and green hummus served with crispy pita trees, perfect for any gathering.
Ingredients

- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- Salt to taste
- 1/4 cup roasted red peppers, chopped
- 1/4 cup fresh spinach, chopped
- 1/4 cup fresh parsley, chopped
- 1 tablespoon water (more if needed)
- 4 whole wheat pita breads
Instructions
- Preheat the oven to 350°F.
- Cut each pita bread into triangles and arrange them on a baking sheet.
- Brush lightly with olive oil and sprinkle with salt.
- Bake for 10-12 minutes or until golden and crispy.
- In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, garlic, cumin, and salt. Blend until smooth.
- If the mixture is too thick, add water one tablespoon at a time until desired consistency is reached.
- Divide the hummus mixture in half. To one half, add the roasted red peppers and blend until smooth.
- To the other half, add the spinach and parsley, blending until smooth.
- Serve the red hummus in one bowl and the green hummus in another.
- Arrange the baked pita triangles around the hummus bowls like trees.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the red hummus.
- For a creamier texture, substitute Greek yogurt for half of the tahini in either hummus.
