Rebel fruit soda with hibiscus syrup and citrus foam delights your taste buds!
Ingredients

- ½ cup dried hibiscus flowers (or 3 hibiscus tea bags)
- 1 cup water
- ½ cup sugar or honey
- 1 tsp orange zest
- Optional: 1 small piece of ginger, sliced
- Sparkling water or soda water (chilled)
- Ice cubes
- Mixed fruit slices (e.g., strawberries, orange wheels, kiwi, blueberries)
- Mint leaves for garnish
- ¼ cup citrus juice (lemon + orange mix works well)
- 1 egg white (or aquafaba for vegan version)
- 1 tsp sugar
- Pinch of salt
Instructions
- Make the hibiscus syrup: Bring water to a boil, then remove from heat. Add hibiscus flowers, sugar, orange zest, and ginger. Let steep for 10–15 minutes. Strain and cool. Store in the fridge for up to a week.
- Prepare the citrus foam: In a clean bowl, whisk egg white (or aquafaba) with citrus juice, sugar, and a pinch of salt. Whip until foamy and airy — soft peaks are perfect.
- Assemble the soda: Fill a glass with ice and fresh fruit slices. Pour 2–3 tbsp hibiscus syrup over the fruit. Top with sparkling water. Stir gently.
- Top with foam: Spoon the citrus foam gently over the drink like a latte. Garnish with mint and a slice of citrus on the rim.
Notes
- Store hibiscus syrup in the fridge for up to a week.
- For a vegan version, use aquafaba instead of egg white.
