Ingredients

  • 2 ripe avocados
  • 1/2 cup fresh lime juice
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup coconut milk (or any milk of choice)
  • Zest of 1 lime

Instructions

  1. Cut the avocados in half, remove the pit, and scoop the flesh into a blender or food processor.
  2. Add the fresh lime juice, honey (or maple syrup), vanilla extract, salt, coconut milk, and lime zest to the blender.
  3. Blend on high until the mixture is smooth and creamy, scraping down the sides as needed.
  4. Taste and adjust sweetness or lime juice as desired.
  5. Once blended, transfer the mousse into serving bowls or glasses.
  6. Chill in the refrigerator for at least 30 minutes before serving to enhance the flavors.

Notes

  • For a chocolate twist, add 2 tablespoons of cocoa powder to the blender before mixing.
