  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh blueberries (plus extra for garnish)
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1 cup sugar and continue to beat until well combined.
  5. Add the vanilla extract and mix well.
  6. Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  7. In a separate bowl, combine the sour cream, blueberries, lemon juice, and cornstarch. Gently fold this mixture into the cream cheese mixture until just combined.
  8. Pour the cheesecake batter over the cooled crust in the springform pan.
  9. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  10. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  11. Remove the cheesecake from the oven and let it cool to room temperature.
  12. Once cooled, refrigerate for at least 4 hours or overnight before serving.
  13. Garnish with fresh blueberries before slicing and serving.
