- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 (8-ounce) packages cream cheese, softened

- 1 teaspoon vanilla extract

- 1 cup sour cream
- 1 cup fresh blueberries (plus extra for garnish)
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1 cup sugar and continue to beat until well combined.
- Add the vanilla extract and mix well.
- Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
- In a separate bowl, combine the sour cream, blueberries, lemon juice, and cornstarch. Gently fold this mixture into the cream cheese mixture until just combined.
- Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Once cooled, refrigerate for at least 4 hours or overnight before serving.
- Garnish with fresh blueberries before slicing and serving.
