- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup raspberry jam
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Gradually add the flour and salt, mixing until just combined.
- Take half of the dough and spread it evenly in a greased baking pan.
- Spread the raspberry jam over the dough.
- Take the remaining dough and crumble it over the jam layer.
- Bake for 25-30 minutes or until the edges are lightly golden.
- Allow to cool before cutting into squares.
Notes
- For a more intense raspberry flavor, use homemade raspberry jam.
- Store cookies in an airtight container for up to a week.
