Description

Delightful Raspberry Macarons recipe with a fruity buttercream filling.


Ingredients

  • 1 ¾ cups powdered sugar
  • 1 cup almond flour
  • 3 large egg whites, at room temperature
  • ¼ teaspoon cream of tartar
  • ½ cup granulated sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon raspberry extract
  • Pink food coloring (optional)
  • ½ cup raspberry jam
  • ½ cup unsalted butter, softened
  • 1 cup powdered sugar (for buttercream)
  • 1 teaspoon vanilla extract (for buttercream)

Instructions

  1. Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper.
  2. In a bowl, sift together the powdered sugar and almond flour to remove any lumps. Set aside.
  3. In a separate bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the granulated sugar while continuing to beat until stiff peaks form.
  4. Gently fold in the sifted almond flour mixture, vanilla extract, raspberry extract, and pink food coloring (if using) until fully combined. Be careful not to overmix.
  5. Transfer the macaron batter to a piping bag fitted with a round tip. Pipe 1.5-inch circles onto the prepared baking sheets, leaving space between each.
  6. Tap the baking sheets gently on the counter to release any air bubbles. Let the macarons sit at room temperature for 30-60 minutes, or until a skin forms on the surface.
  7. Bake for 15-18 minutes, rotating the sheets halfway through. The macarons should have a smooth surface and a slight foot.
  8. Remove from the oven and let cool completely on the baking sheets.
  9. For the buttercream, beat the softened butter until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth.
  10. Pair the cooled macaron shells and spread a layer of raspberry jam on one half and a layer of buttercream on the other. Sandwich them together.

Notes

  • For a fruitier flavor, add a few drops of raspberry puree to the buttercream.
  • To customize, try using different fruit jams or extracts, such as lemon or strawberry, for a variety of flavors.
