Delightful Raspberry Macarons recipe with a fruity buttercream filling.

- 1 ¾ cups powdered sugar
- 1 cup almond flour
- 3 large egg whites, at room temperature
- ¼ teaspoon cream of tartar
- ½ cup granulated sugar
- ½ teaspoon vanilla extract
- ½ teaspoon raspberry extract
- Pink food coloring (optional)
- ½ cup raspberry jam
- ½ cup unsalted butter, softened
- 1 cup powdered sugar (for buttercream)
- 1 teaspoon vanilla extract (for buttercream)
Instructions
- Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper.
- In a bowl, sift together the powdered sugar and almond flour to remove any lumps. Set aside.
- In a separate bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the granulated sugar while continuing to beat until stiff peaks form.
- Gently fold in the sifted almond flour mixture, vanilla extract, raspberry extract, and pink food coloring (if using) until fully combined. Be careful not to overmix.
- Transfer the macaron batter to a piping bag fitted with a round tip. Pipe 1.5-inch circles onto the prepared baking sheets, leaving space between each.
- Tap the baking sheets gently on the counter to release any air bubbles. Let the macarons sit at room temperature for 30-60 minutes, or until a skin forms on the surface.
- Bake for 15-18 minutes, rotating the sheets halfway through. The macarons should have a smooth surface and a slight foot.
- Remove from the oven and let cool completely on the baking sheets.
- For the buttercream, beat the softened butter until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth.
- Pair the cooled macaron shells and spread a layer of raspberry jam on one half and a layer of buttercream on the other. Sandwich them together.
Notes
- For a fruitier flavor, add a few drops of raspberry puree to the buttercream.
- To customize, try using different fruit jams or extracts, such as lemon or strawberry, for a variety of flavors.
