Delightful Raspberry Filled Almond Snowball Cookies that are perfect for any occasion.

- 1 cup unsalted butter, softened
- 1 cup powdered sugar, plus extra for dusting
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 ½ cups all-purpose flour
- 1 cup finely chopped almonds
- ½ teaspoon salt
- ½ cup raspberry jam
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and 1 cup of powdered sugar until light and fluffy.
- Mix in the vanilla and almond extracts until well combined.
- Gradually add the flour, chopped almonds, and salt to the butter mixture. Stir until the dough comes together.
- Take about 1 tablespoon of dough and flatten it in your palm. Place about ½ teaspoon of raspberry jam in the center, then fold the dough over the jam and roll it into a ball.
- Repeat with the remaining dough and jam, placing the cookies on the prepared baking sheet about 2 inches apart.
- Bake for 12-15 minutes, or until the bottoms are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust the cookies with additional powdered sugar before serving.
Notes
- For a chocolate twist, substitute half of the almond flour with cocoa powder and use chocolate hazelnut spread instead of raspberry jam.
- To enhance the almond flavor, add a few drops of almond extract to the raspberry jam before filling the cookies.
