Ingredients

- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced (red, yellow, and green)
- 1 cup shredded carrots
- 1 cup purple cabbage, shredded
- 1 cup spinach or mixed greens
- 1/2 cup chickpeas, drained and rinsed
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup balsamic vinaigrette or dressing of choice
Instructions
- Start by preparing all the vegetables and ingredients.
- In a clean mason jar, layer the ingredients starting with the dressing at the bottom.
- Add the chickpeas next to prevent them from getting soggy.
- Layer the cherry tomatoes, cucumbers, bell peppers, shredded carrots, purple cabbage, and spinach in that order.
- Top with feta cheese if using.
- Seal the jar tightly and store in the refrigerator until ready to eat.
- When ready to serve, shake the jar to mix the ingredients and enjoy!
