Ingredients

  • 1 cup strong brewed coffee, cooled
  • 1/2 cup coconut milk
  • 1/2 cup sweetened shredded coconut
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 1/4 cup toasted almonds, chopped (optional)
  • Cocoa powder for dusting

Instructions

  1. In a shallow dish, combine the brewed coffee and coconut milk.
  2. Dip each ladyfinger into the mixture for about 2 seconds, ensuring they are soaked but not soggy.
  3. Arrange half of the soaked ladyfingers in a single layer at the bottom of a 9×9-inch baking dish.
  4. In a mixing bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract together until smooth and creamy.
  5. Gently fold in the shredded coconut.
  6. Spread half of the mascarpone mixture over the layer of ladyfingers in the baking dish.
  7. If using, sprinkle half of the chopped toasted almonds over the mascarpone layer.
  8. Repeat the process with another layer of soaked ladyfingers, followed by the remaining mascarpone mixture.
  9. Smooth the top with a spatula.
  10. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  11. Before serving, dust the top with cocoa powder and sprinkle with any remaining toasted almonds.

Notes

  • For a tropical twist, add a layer of fresh pineapple slices between the ladyfingers and mascarpone layers.
  • For a chocolatey variation, use chocolate-flavored ladyfingers and fold in some cocoa powder into the mascarpone mixture.
