- 1 cup strong brewed coffee, cooled
- 1/2 cup coconut milk
- 1/2 cup sweetened shredded coconut
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- 1/4 cup toasted almonds, chopped (optional)
- Cocoa powder for dusting
Instructions
- In a shallow dish, combine the brewed coffee and coconut milk.
- Dip each ladyfinger into the mixture for about 2 seconds, ensuring they are soaked but not soggy.
- Arrange half of the soaked ladyfingers in a single layer at the bottom of a 9×9-inch baking dish.
- In a mixing bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract together until smooth and creamy.
- Gently fold in the shredded coconut.
- Spread half of the mascarpone mixture over the layer of ladyfingers in the baking dish.
- If using, sprinkle half of the chopped toasted almonds over the mascarpone layer.
- Repeat the process with another layer of soaked ladyfingers, followed by the remaining mascarpone mixture.
- Smooth the top with a spatula.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top with cocoa powder and sprinkle with any remaining toasted almonds.
Notes
- For a tropical twist, add a layer of fresh pineapple slices between the ladyfingers and mascarpone layers.
- For a chocolatey variation, use chocolate-flavored ladyfingers and fold in some cocoa powder into the mascarpone mixture.
