- 2 rabbit loins (about 1 pound total)
- 2 tablespoons beef tallow
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the rabbit loins with salt and pepper on all sides.
- In a large skillet, heat the beef tallow over medium heat until melted.
- Add the rabbit loins to the skillet and sear for about 3-4 minutes on each side until golden brown. Remove the loins from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until the onion is translucent.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Reduce the heat to low and stir in the heavy cream and thyme. Allow the sauce to simmer for about 5 minutes until slightly thickened.
- Return the rabbit loins to the skillet, spooning the sauce over them. Cover and cook for an additional 5-7 minutes, or until the rabbit is cooked through and reaches an internal temperature of 160°F.
- Remove from heat and let rest for a few minutes before slicing. Serve garnished with fresh parsley.

- For added flavor, marinate the rabbit loins in olive oil, lemon juice, and herbs for a few hours before cooking.
- Substitute the rabbit with chicken thighs for a more widely available option while maintaining a similar cooking method.
