  • 2 rabbit loins (about 1 pound total)
  • 2 tablespoons beef tallow
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the rabbit loins with salt and pepper on all sides.
  2. In a large skillet, heat the beef tallow over medium heat until melted.
  3. Add the rabbit loins to the skillet and sear for about 3-4 minutes on each side until golden brown. Remove the loins from the skillet and set aside.
  4. In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until the onion is translucent.
  5. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Reduce the heat to low and stir in the heavy cream and thyme. Allow the sauce to simmer for about 5 minutes until slightly thickened.
  7. Return the rabbit loins to the skillet, spooning the sauce over them. Cover and cook for an additional 5-7 minutes, or until the rabbit is cooked through and reaches an internal temperature of 160°F.
  8. Remove from heat and let rest for a few minutes before slicing. Serve garnished with fresh parsley.
