Description

A quick and easy casserole featuring rotisserie chicken and zucchini, perfect for a weeknight dinner.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 2 medium zucchini, sliced into thin half-moons
  • 1 small onion, diced
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup sour cream
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté zucchini and onion until softened, about 5–6 minutes.
  3. In a bowl, combine chicken, sautéed veggies, cheeses, sour cream, garlic powder, salt, and pepper.
  4. Pour into a greased 8×8-inch baking dish and spread evenly.
  5. Bake for 20–25 minutes, until bubbly and golden on top.
  6. Let rest for 5 minutes before serving.
