- 2 pounds beef tenderloin, trimmed
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, finely chopped
- 1/2 cup cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
Instructions
- Preheat the oven to 400°F.
- In a skillet over medium heat, add olive oil and sauté garlic for about 1 minute until fragrant.
- Add chopped mushrooms and spinach to the skillet, cooking until the spinach wilts and mushrooms soften, about 5 minutes.
- In a mixing bowl, combine the sautéed mixture with cream cheese, Parmesan cheese, sun-dried tomatoes, thyme, salt, and pepper. Mix until well combined.
- Carefully cut a pocket into the beef tenderloin lengthwise, being careful not to cut all the way through.
- Stuff the tenderloin with the cheese and vegetable mixture, securing the opening with toothpicks or kitchen twine.
- Brush the outside of the tenderloin with balsamic vinegar and season with additional salt and pepper.
- Place the stuffed tenderloin in a roasting pan and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 135°F for medium-rare.
- Remove from the oven and let rest for 10 minutes before slicing.
Notes
- For added flavor, consider marinating the beef tenderloin in a mixture of olive oil, balsamic vinegar, and herbs for a few hours before stuffing.
- You can substitute the spinach with kale or add nuts like walnuts or pecans for extra crunch.
