  • 2 pounds beef tenderloin, trimmed
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat the oven to 400°F.
  2. In a skillet over medium heat, add olive oil and sauté garlic for about 1 minute until fragrant.
  3. Add chopped mushrooms and spinach to the skillet, cooking until the spinach wilts and mushrooms soften, about 5 minutes.
  4. In a mixing bowl, combine the sautéed mixture with cream cheese, Parmesan cheese, sun-dried tomatoes, thyme, salt, and pepper. Mix until well combined.
  5. Carefully cut a pocket into the beef tenderloin lengthwise, being careful not to cut all the way through.
  6. Stuff the tenderloin with the cheese and vegetable mixture, securing the opening with toothpicks or kitchen twine.
  7. Brush the outside of the tenderloin with balsamic vinegar and season with additional salt and pepper.
  8. Place the stuffed tenderloin in a roasting pan and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 135°F for medium-rare.
  9. Remove from the oven and let rest for 10 minutes before slicing.

  • For added flavor, consider marinating the beef tenderloin in a mixture of olive oil, balsamic vinegar, and herbs for a few hours before stuffing.
  • You can substitute the spinach with kale or add nuts like walnuts or pecans for extra crunch.
