- 1 teaspoon salt

- 1 lemon, zested and juiced

Instructions
- Preheat your oven to 375°F.
- In a small bowl, combine the minced garlic, rosemary, thyme, salt, black pepper, lemon zest, and lemon juice. Mix well to create a marinade.
- Rub the marinade all over the quail, ensuring they are well coated. Let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for more flavor.
- In a large oven-safe skillet, heat the beef drippings and olive oil over medium heat until hot.
- Carefully place the marinated quail in the skillet, breast side down. Sear for about 4-5 minutes until golden brown.
- Flip the quail over and transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until the internal temperature reaches 165°F.
- Remove the skillet from the oven and let the quail rest for 5 minutes before serving.
- Garnish with fresh parsley and serve with your choice of sides.
