  • 2 pounds beef bones (preferably marrow bones)
  • 1 pound beef brisket
  • 1 onion, halved
  • 1 piece of ginger (about 3 inches), halved lengthwise
  • 5 star anise pods
  • 4 cloves
  • 1 cinnamon stick
  • 1 tablespoon coriander seeds
  • 1 tablespoon fish sauce
  • 1 tablespoon salt
  • 12 cups water
  • 8 ounces rice noodles (banh pho)
  • Fresh basil leaves, for garnish
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Sliced jalapeños, for serving
  • Bean sprouts, for serving

Instructions

  1. Preheat your oven to 400°F. Place the beef bones on a baking sheet and roast for about 30 minutes until browned.
  2. In a large pot, combine the roasted bones, brisket, onion, ginger, star anise, cloves, cinnamon stick, coriander seeds, fish sauce, salt, and water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low and let it simmer uncovered for at least 4 hours. Skim off any foam or impurities that rise to the surface.
  4. After simmering, remove the brisket and set it aside to cool. Strain the broth through a fine-mesh sieve into another pot, discarding the solids.
  5. Slice the cooled brisket thinly against the grain and set aside.
  6. In the same pot with the strained broth, bring the liquid back to a gentle simmer. Cook the rice noodles according to package instructions, then drain and rinse under cold water.
  7. To serve, place a portion of noodles in a bowl, top with sliced brisket, and ladle the hot broth over the top. Garnish with fresh basil, cilantro, lime wedges, jalapeños, and bean sprouts.

Notes

  • For a richer flavor, you can add a tablespoon of hoisin sauce or sriracha to the broth while simmering.
  • If you prefer a quicker version, use pre-cooked beef or leftover roast beef instead of simmering the brisket. Just add it to the bowls right before serving.
