- 4 cups confectioners’ sugar
- 1 teaspoon pure vanilla extract
- 1–2 tablespoons milk (to adjust consistency)
- 1 teaspoon pumpkin spice blend (for decoration)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 13×18-inch baking sheet by greasing and dusting it with flour.
- In a large bowl, combine the flour, sugar, pumpkin spice blend, baking soda, and sea salt, whisking until everything is evenly mixed.
- In a separate bowl, blend the canola oil, pumpkin puree, eggs, vanilla extract, and buttermilk until the mixture is smooth and homogenous.
- Slowly incorporate the wet ingredients into the dry mixture, stirring gently until just blended—be careful not to overmix.
- Transfer the batter into the prepared baking sheet, smoothing it out evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake bakes, prepare the frosting. In a mixing bowl, beat the softened butter and cream cheese together until light and fluffy.
- Gradually add the confectioners’ sugar, mixing until you achieve a smooth consistency. Blend in the vanilla extract and add milk a little at a time until the frosting is spreadable.
- Once the cake has finished baking, allow it to cool in the pan for about 10-15 minutes before applying the frosting.
- Evenly spread the cream cheese frosting over the cooled cake.
- Finish by dusting the top with pumpkin spice blend for a decorative touch. Cut into squares and enjoy!
