Description

These Pumpkin S’mores Cookies are a delicious mix of fall pumpkin flavors and classic s’mores. Soft, chewy, and packed with chocolate, marshmallows, and graham crackers!

    • 1/2 cup unsalted butter, softened
    • 1/2 cup granulated sugar
    • 1/2 cup brown sugar
    • 1/2 cup pumpkin purée
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 3/4 cups all-purpose flour
    • 1/2 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon cinnamon
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground cloves
    • 3/4 cup graham cracker crumbs
    • 1/2 cup semi-sweet chocolate chunks
    • 1/2 cup mini marshmallows

Instructions

  1. Preheat oven to 350°F and line a baking sheet.
  2. Cream together butter and sugars. Mix in pumpkin, egg, and vanilla.
  3. In a separate bowl, whisk dry ingredients, then add to wet ingredients.
  4. Fold in graham cracker crumbs, chocolate chunks, and marshmallows.
  5. Scoop dough onto baking sheet and bake for 10-12 minutes.

Notes

  • Chilling the dough for 30 minutes before baking helps prevent spreading.
  • For extra gooey cookies, add more marshmallows on top before baking.
