These Pumpkin S’mores Cookies are a delicious mix of fall pumpkin flavors and classic s’mores. Soft, chewy, and packed with chocolate, marshmallows, and graham crackers!

- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup pumpkin purée
- 1 large egg
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 3/4 cup graham cracker crumbs
- 1/2 cup semi-sweet chocolate chunks
- 1/2 cup mini marshmallows
Instructions
- Preheat oven to 350°F and line a baking sheet.
- Cream together butter and sugars. Mix in pumpkin, egg, and vanilla.
- In a separate bowl, whisk dry ingredients, then add to wet ingredients.
- Fold in graham cracker crumbs, chocolate chunks, and marshmallows.
- Scoop dough onto baking sheet and bake for 10-12 minutes.
Notes
- Chilling the dough for 30 minutes before baking helps prevent spreading.
- For extra gooey cookies, add more marshmallows on top before baking.
