Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 cup apple cider
  • 2 tablespoons brown sugar
  • 1 tablespoon whole grain mustard
  • 1 tablespoon tamari sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. In a medium saucepan, mix together the apple cider, brown sugar, whole grain mustard, tamari sauce, minced garlic, and freshly grated ginger. Heat the mixture over medium heat until it reaches a gentle boil, then lower the heat and let it simmer for about 10-15 minutes, stirring occasionally, until it thickens and reduces by half. Take it off the heat and let it cool slightly.
  2. Heat a grill or non-stick skillet over medium-high heat. Coat the salmon fillets with extra virgin olive oil and season them generously with salt and pepper.
  3. Place the salmon fillets on the grill or skillet, skin-side down. Allow them to cook undisturbed for about 4-5 minutes, then flip them carefully.
  4. Generously brush the reduced apple cider glaze over the salmon fillets. Continue cooking for another 4-5 minutes, or until the salmon is opaque and flakes easily with a fork.
  5. Once cooked, transfer the salmon to a plate and let it sit for a minute. Drizzle any leftover glaze on top and sprinkle with chopped parsley if you like.
