Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic, grated ginger, and red pepper flakes. Cook for an additional 1-2 minutes until fragrant.
- Add the chopped pumpkin leaves to the skillet and stir well to combine with the onion mixture. Cook for about 5 minutes, stirring occasionally, until the leaves are wilted.
- In a small bowl, mix the peanut butter, vegetable broth (or water), soy sauce, and lime juice until smooth.
- Pour the peanut butter mixture over the pumpkin leaves in the skillet. Stir well to coat the leaves evenly.
- Reduce the heat to low and simmer for another 5 minutes, allowing the flavors to meld. Season with salt to taste.
- Serve warm as a side dish or over rice for a complete meal.
