Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic, grated ginger, and red pepper flakes. Cook for an additional 1-2 minutes until fragrant.
  3. Add the chopped pumpkin leaves to the skillet and stir well to combine with the onion mixture. Cook for about 5 minutes, stirring occasionally, until the leaves are wilted.
  4. In a small bowl, mix the peanut butter, vegetable broth (or water), soy sauce, and lime juice until smooth.
  5. Pour the peanut butter mixture over the pumpkin leaves in the skillet. Stir well to coat the leaves evenly.
  6. Reduce the heat to low and simmer for another 5 minutes, allowing the flavors to meld. Season with salt to taste.
