Instructions
- Begin by heating a medium saucepan over medium heat.
- Combine the cooled brewed coffee, almond milk, and sweetener, stirring gently until the sweetener is completely dissolved.
- In a separate small bowl, mix the gelatin powder with 1/4 cup of cold water and allow it to rest for about 5 minutes to activate.
- Once the gelatin has absorbed the water and thickened, incorporate it into the warm coffee mixture, stirring continuously until it is fully dissolved.
- Take the saucepan off the heat and blend in the protein powder, vanilla extract, and a pinch of salt, ensuring a smooth consistency.
- Carefully pour the mixture into individual cups or a large mold and place it in the refrigerator.
- Allow it to chill for a minimum of 4 hours, or until it has set firmly.
- Serve the chilled coffee gelatin as is, or add a dollop of whipped cream or a dusting of cocoa powder for an extra touch.

- For a richer mocha flavor, stir in 2 tablespoons of cocoa powder into the coffee mixture before heating.
