Princess Cake is a delightful and visually stunning dessert that features layers of fluffy cake, raspberry jam, and whipped cream, all covered in a smooth layer of marzipan.

- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- ½ cup milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract

- 1 cup raspberry jam
- 2 cups heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
- 8 ounces marzipan (white or colored)
- Green food coloring (optional, for decoration)
- Fresh raspberries and mint leaves (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Once the cake is cool, slice it in half horizontally to create two layers. Spread raspberry jam on the top of the bottom layer and place the second layer on top.
- In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Spread a layer of whipped cream over the top and sides of the cake.
- Roll out the marzipan on a lightly powdered sugar-dusted surface to about ¼ inch thick. Carefully drape the marzipan over the cake, smoothing it down to cover completely.
- If desired, tint some of the marzipan green and create decorative leaves or flowers. Garnish the cake with fresh raspberries and mint leaves.
Notes
- For a chocolate version, substitute ½ cup of flour with cocoa powder and add chocolate ganache instead of raspberry jam.
- You can use store-bought whipped topping instead of homemade whipped cream for a quicker preparation.
