Ingredients

  • 2 pounds pork shoulder, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced (button or cremini)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Set the pressure cooker to the sauté function. Add olive oil and heat until shimmering.
  2. Add the pork cubes in batches, browning them on all sides. Remove and set aside.
  3. In the same pot, add the diced onion and sauté for about 3 minutes until translucent.
  4. Stir in the minced garlic and sliced mushrooms, cooking for another 2-3 minutes until the mushrooms are softened.
  5. Return the browned pork to the pot, then add the carrots, celery, thyme, oregano, salt, and black pepper.
  6. Pour in the chicken broth, diced tomatoes, tomato paste, Worcestershire sauce, and add the bay leaves. Stir to combine.
  7. Close the lid of the pressure cooker and set it to cook on high pressure for 35 minutes.
  8. Once cooking is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release for any remaining pressure.
  9. Remove the bay leaves and stir the ragout. Adjust seasoning if necessary.
  10. Serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, add a splash of red wine before sealing the pressure cooker.
  • Serve over egg noodles, rice, or mashed potatoes for a heartier meal.
