A savory and hearty Pressure-Cooker Mushroom Pork Ragout that is perfect for a comforting meal.

- 2 pounds pork shoulder, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced (button or cremini)
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup chicken broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 2 bay leaves
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Set the pressure cooker to the sauté function. Add olive oil and heat until shimmering.
- Add the pork cubes in batches, browning them on all sides. Remove and set aside.
- In the same pot, add the diced onion and sauté for about 3 minutes until translucent.
- Stir in the minced garlic and sliced mushrooms, cooking for another 2-3 minutes until the mushrooms are softened.
- Return the browned pork to the pot, then add the carrots, celery, thyme, oregano, salt, and black pepper.
- Pour in the chicken broth, diced tomatoes, tomato paste, Worcestershire sauce, and add the bay leaves. Stir to combine.
- Close the lid of the pressure cooker and set it to cook on high pressure for 35 minutes.
- Once cooking is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release for any remaining pressure.
- Remove the bay leaves and stir the ragout. Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
Notes
- For a richer flavor, add a splash of red wine before sealing the pressure cooker.
- Serve over egg noodles, rice, or mashed potatoes for a heartier meal.
