- 2 large eggs
- 1/4 cup all-purpose flour

- 1/2 teaspoon garlic powder
- 1/4 cup vegetable oil (for frying)
- 1/4 cup sour cream (for serving, optional)
- Chopped fresh chives (for garnish, optional)
Instructions
- Peel and grate the potatoes and onion.
- Place the grated mixture in a clean kitchen towel and twist tightly to squeeze out excess moisture.
- In a large bowl, mix the drained potatoes and onion with the eggs, flour, baking powder, salt, black pepper, and garlic powder until evenly blended.
- Heat vegetable oil in a large skillet over medium heat.
- Drop dollops of the potato mixture into the hot oil, gently pressing them down to form flat cakes.
- Fry each fritter for about 4-5 minutes per side, or until golden-brown and crispy.
- Transfer the fritters to a plate lined with paper towels to absorb excess oil.
- Serve warm, topped with fresh chives and a spoonful of sour cream if desired.
