- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1 cup sliced mushrooms
- 1 tablespoon olive oil
- 1 pound ground pork
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes (optional)
- 1 package (8 oz) konjac noodles (shirataki noodles), rinsed and drained
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the ground pork and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Add the minced garlic and ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.
- Stir in the shredded cabbage, carrots, and mushrooms. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender.
- Add the soy sauce, sesame oil, and red pepper flakes (if using) to the skillet. Mix well to combine all ingredients.
- In a separate pot, heat the rinsed konjac noodles according to package instructions, usually by boiling for 2-3 minutes. Drain and add them to the skillet with the pork and vegetables. Stir to combine everything thoroughly.
- Cook for an additional 2-3 minutes to heat through.
- Serve hot, garnished with sliced green onions and sesame seeds.

- For added crunch, top with crushed pork rinds before serving.
- Substitute ground pork with ground chicken or turkey for a leaner option.
- Serve with cucumber slices or celery sticks on the side for a refreshing crunch.
