Ingredients

  • 1 cup shredded carrots
  • 1 cup sliced mushrooms
  • 1 tablespoon olive oil
  • 1 pound ground pork
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (optional)
  • 1 package (8 oz) konjac noodles (shirataki noodles), rinsed and drained
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the ground pork and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Add the minced garlic and ginger to the skillet, cooking for an additional 1-2 minutes until fragrant.
  3. Stir in the shredded cabbage, carrots, and mushrooms. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender.
  4. Add the soy sauce, sesame oil, and red pepper flakes (if using) to the skillet. Mix well to combine all ingredients.
  5. In a separate pot, heat the rinsed konjac noodles according to package instructions, usually by boiling for 2-3 minutes. Drain and add them to the skillet with the pork and vegetables. Stir to combine everything thoroughly.
  6. Cook for an additional 2-3 minutes to heat through.
  7. Serve hot, garnished with sliced green onions and sesame seeds.
