Description

Pork Rib Mulligatawny is a flavorful and hearty dish that combines tender pork ribs with a variety of vegetables and spices, creating a unique and satisfying meal.

Ingredients

Scale
  • 2 pounds pork ribs, cut into individual pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 medium carrot, diced
  • 1 medium potato, diced
  • 1 apple, peeled and diced
  • 1 cup canned diced tomatoes
  • 4 cups chicken broth
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1 cup coconut milk
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • Juice of 1 lime

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the pork ribs and brown on all sides, about 5-7 minutes. Remove the ribs and set aside.
  2. In the same pot, add the diced onion, garlic, and ginger. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the carrot, potato, and apple to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Stir in the diced tomatoes, chicken broth, curry powder, cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Return the browned pork ribs to the pot.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the pork is tender and falling off the bone.
  6. Once the pork is tender, stir in the coconut milk and simmer for an additional 10 minutes.
  7. Before serving, stir in the lime juice and adjust seasoning if necessary. Garnish with fresh cilantro.

Notes

  • For a spicier kick, add more cayenne pepper or a chopped jalapeño during the sautéing step.
  • Substitute the pork ribs with chicken thighs or lentils for a different protein option.
