- 2 pounds pork ribs, cut into individual pieces
- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 medium carrot, diced
- 1 medium potato, diced
- 1 apple, peeled and diced
- 1 cup canned diced tomatoes
- 4 cups chicken broth
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 cup coconut milk
- 2 tablespoons fresh cilantro, chopped (for garnish)
- Juice of 1 lime
Instructions
- In a large pot, heat the vegetable oil over medium-high heat. Add the pork ribs and brown on all sides, about 5-7 minutes. Remove the ribs and set aside.
- In the same pot, add the diced onion, garlic, and ginger. Sauté until the onion is translucent, about 3-4 minutes.
- Add the carrot, potato, and apple to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the diced tomatoes, chicken broth, curry powder, cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Return the browned pork ribs to the pot.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the pork is tender and falling off the bone.
- Once the pork is tender, stir in the coconut milk and simmer for an additional 10 minutes.
- Before serving, stir in the lime juice and adjust seasoning if necessary. Garnish with fresh cilantro.
Notes
- For a spicier kick, add more cayenne pepper or a chopped jalapeño during the sautéing step.
- Substitute the pork ribs with chicken thighs or lentils for a different protein option.
