- 2 pounds pork jowl, cut into chunks
- 8 cups chicken broth
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cans (15 ounces each) hominy, drained and rinsed
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups water
- 1 lime, cut into wedges
- Chopped fresh cilantro, for garnish
- Sliced radishes, for garnish
- Diced avocado, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the pork jowl chunks to the pot and brown on all sides, about 8-10 minutes.
- Stir in the ground cumin, dried oregano, chili powder, salt, and pepper. Cook for another minute to toast the spices.
- Pour in the chicken broth and water, bringing the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the pork is tender.
- Once the pork is tender, add the hominy to the pot and simmer for an additional 20 minutes.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with lime wedges, chopped cilantro, sliced radishes, and diced avocado.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the pot.
- You can substitute pork jowl with pork shoulder or belly for a different flavor profile.
