  • 8 cups chicken broth
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cans (15 ounces each) hominy, drained and rinsed
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups water
  • 1 lime, cut into wedges
  • Chopped fresh cilantro, for garnish
  • Sliced radishes, for garnish
  • Diced avocado, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Add the pork jowl chunks to the pot and brown on all sides, about 8-10 minutes.
  3. Stir in the ground cumin, dried oregano, chili powder, salt, and pepper. Cook for another minute to toast the spices.
  4. Pour in the chicken broth and water, bringing the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the pork is tender.
  5. Once the pork is tender, add the hominy to the pot and simmer for an additional 20 minutes.
  6. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with lime wedges, chopped cilantro, sliced radishes, and diced avocado.
