  • 1 sheet of puff pastry (thawed)
  • 1/2 cup pomegranate seeds
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 egg (beaten, for egg wash)
  • Fresh rosemary sprigs (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface to smooth out creases. Cut the pastry into a large circle, about 12 inches in diameter.
  3. Place the Brie cheese in the center of the pastry circle.
  4. In a bowl, mix together the pomegranate seeds, chopped pecans, brown sugar, cinnamon, salt, and pepper. Spoon this mixture over the Brie cheese.
  5. Fold the edges of the puff pastry over the Brie, pleating as necessary to create a wreath shape. Trim any excess pastry if needed.
  6. Brush the pastry with the beaten egg to give it a golden color when baked.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh rosemary sprigs before serving.
