- 1 cup pomegranate juice
- 1 tablespoon gelatin powder
- 2 tablespoons chilled water
- 1 cup whipping cream
- 1/4 cup confectioners’ sugar
- 1 teaspoon pure vanilla extract
- 1/2 cup strained Greek yogurt
- 1/2 cup pomegranate arils (for decoration)
- Fresh mint leaves (for decoration)
Instructions
- Gently warm the pomegranate juice in a saucepan over medium heat until it starts to bubble lightly, then remove from heat.
- In a separate bowl, mix the gelatin powder with the chilled water and let it sit for about 5 minutes to soften.
- Stir the gelatin mixture into the warm pomegranate juice until it completely dissolves, then set aside to cool down.
- In a large bowl, whip the cream along with the confectioners’ sugar and vanilla extract until soft peaks form.
- Carefully incorporate the strained Greek yogurt into the whipped cream, mixing until smooth.
- Slowly add the cooled pomegranate juice mixture into the cream and yogurt blend, folding gently until well combined.
- Spoon the mousse into dome-shaped silicone molds or small cups, leveling the tops with a spatula.
- Cover the molds and place them in the refrigerator for a minimum of 4 hours to firm up.
- When ready to serve, gently unmold the mousse onto a plate and adorn with pomegranate arils and fresh mint leaves for a beautiful presentation.

- For a chocolate variation, mix in 2 tablespoons of cocoa powder with the whipped cream before adding the yogurt.
