Ingredients

  • 2 to 3 pounds bone-in lamb shoulder
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup pomegranate molasses
  • 1 tablespoon pure honey
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup chicken stock
  • Fresh pomegranate seeds and chopped parsley for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Rub the lamb shoulder generously with sea salt and black pepper.
  3. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  4. Sear the lamb shoulder on all sides until browned, about 4-5 minutes per side.
  5. Remove the lamb and set it aside on a plate.
  6. Add the chopped onion and minced garlic to the pot and sauté until soft and translucent, about 5 minutes.
  7. Add the pomegranate molasses, honey, cumin, coriander, smoked paprika, cinnamon, and cayenne pepper (if using) to the pot and stir for 2-3 minutes.
  8. Return the seared lamb shoulder to the pot and pour in the chicken stock.
  9. Bring the mixture to a gentle simmer, cover the pot, and transfer it to the oven.
  10. Roast for about 2.5 to 3 hours, or until the lamb is tender and easily shredded.
  11. Let the lamb rest for 10-15 minutes after roasting.
  12. Drizzle the pomegranate glaze over the lamb and garnish with fresh pomegranate seeds and chopped parsley before serving.
