A delicious recipe for Pomegranate Molasses Glazed Lamb Shoulder that is perfect for any occasion.
Ingredients

- 2 to 3 pounds bone-in lamb shoulder
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon extra virgin olive oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 cup pomegranate molasses
- 1 tablespoon pure honey
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper (optional)
- 1 cup chicken stock
- Fresh pomegranate seeds and chopped parsley for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- Rub the lamb shoulder generously with sea salt and black pepper.
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Sear the lamb shoulder on all sides until browned, about 4-5 minutes per side.
- Remove the lamb and set it aside on a plate.
- Add the chopped onion and minced garlic to the pot and sauté until soft and translucent, about 5 minutes.
- Add the pomegranate molasses, honey, cumin, coriander, smoked paprika, cinnamon, and cayenne pepper (if using) to the pot and stir for 2-3 minutes.
- Return the seared lamb shoulder to the pot and pour in the chicken stock.
- Bring the mixture to a gentle simmer, cover the pot, and transfer it to the oven.
- Roast for about 2.5 to 3 hours, or until the lamb is tender and easily shredded.
- Let the lamb rest for 10-15 minutes after roasting.
- Drizzle the pomegranate glaze over the lamb and garnish with fresh pomegranate seeds and chopped parsley before serving.
Notes
- Serves 6.
- For added heat, include cayenne pepper.
- Allow the lamb to rest before serving for better flavor.
