- 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup pomegranate molasses
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Juice of 1 lemon
- Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
Instructions
- In a large bowl, combine pomegranate molasses, olive oil, minced garlic, ground cumin, smoked paprika, salt, black pepper, cayenne pepper (if using), and lemon juice. Whisk until well blended.
- Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
Notes
- For added flavor, sprinkle fresh chopped parsley or mint over the skewers before serving.
- Serve with a side of tzatziki sauce or a simple cucumber salad for a refreshing contrast.
