Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. In a separate bowl, whisk the egg, buttermilk, vegetable oil, and vanilla extract together.
  4. Gradually incorporate the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Carefully add the boiling water to the batter, mixing until it becomes smooth.
  6. Spoon the batter into the prepared muffin tin, filling each liner about two-thirds full.
