Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
- In a separate bowl, whisk the egg, buttermilk, vegetable oil, and vanilla extract together.
- Gradually incorporate the wet mixture into the dry ingredients, stirring gently until just combined.
- Carefully add the boiling water to the batter, mixing until it becomes smooth.
- Spoon the batter into the prepared muffin tin, filling each liner about two-thirds full.
