  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup pepperoni slices
  • 1/4 cup diced bell peppers
  • 1/4 cup sliced black olives
  • 1/4 cup marinara sauce (sugar-free)
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 350°F. Grease four small ramekins or oven-safe bowls with cooking spray or butter.
  2. In a mixing bowl, combine almond flour, coconut flour, baking powder, garlic powder, Italian seasoning, and salt. Stir until well mixed.
  3. In another bowl, whisk together melted butter and egg until combined. Add the dry ingredients to the wet ingredients and mix until a dough forms.
  4. Divide the dough into four equal portions and press each portion into the bottom and sides of the prepared ramekins to form a crust.
  5. Spoon 1 tablespoon of marinara sauce into each crust, then layer with mozzarella cheese, pepperoni, bell peppers, and black olives. Top each pot pie with a sprinkle of Parmesan cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the cheese is bubbly.
  7. Let the pot pies cool for a few minutes before serving.
