- 1/4 cup coconut flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/4 cup shredded mozzarella cheese
- 1/4 cup pepperoni slices
- 1/4 cup diced bell peppers
- 1/4 cup sliced black olives
- 1/4 cup marinara sauce (sugar-free)
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 350°F. Grease four small ramekins or oven-safe bowls with cooking spray or butter.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, garlic powder, Italian seasoning, and salt. Stir until well mixed.
- In another bowl, whisk together melted butter and egg until combined. Add the dry ingredients to the wet ingredients and mix until a dough forms.
- Divide the dough into four equal portions and press each portion into the bottom and sides of the prepared ramekins to form a crust.
- Spoon 1 tablespoon of marinara sauce into each crust, then layer with mozzarella cheese, pepperoni, bell peppers, and black olives. Top each pot pie with a sprinkle of Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the cheese is bubbly.
- Let the pot pies cool for a few minutes before serving.
Notes
- For a spicier kick, add sliced jalapeños or crushed red pepper flakes to the filling.
- You can substitute the pepperoni with cooked sausage or diced chicken for a different flavor.
